Scotch bonnet sauce


Scotch Bonnet is in the same category as habaneros on the Scoville scale.  In fact, it looks very similar to the habanero in appearance.  You can find it mainly on the Caribbean islands and the Maldives Islands and Guyana.  It’s named after a Tam o’shanter hat, or a Scottish bonnet.  They have a Scoville rating of 100,000-350,000 units.  Don’t think scotch bonnets have the same flavor as habaneros because the two peppers look almost identical.  Their flavor is very distinct and goes perfect with the spices of recipes used in the Caribbean.
There are a few brands of scotch bonnet sauce available for purchase on the Internet.  It’s also possible that you can find it at any Jamaican food stores, if you have one in your state.  Hot Sauce World sells Grace Scotch Bonnet Sauce, which is about $4.29 for 4.8 ounces.  This might not seem like much considering the price you have to pay for it, but you have to consider how little you’re going to use each time.  A drop here and a drop there is all you’re going to need.  One use is going to satisfy you for quite some time. 
If you only use this sauce once a day, it will last you several weeks or months, depending on if you use the sauce less frequently than once a day.  In the end, you’re going to love the robust, smoky flavor it gives anything you put on it.  As soon as you get past the heat, you will be blown away by the lingering, powerful flavor you will get from scotch bonnet sauce.
